Chocolate-Espresso Energy Bites

Adults need snacks too!  Come on, moms, how many of you can relate to standing in the pantry slamming back some chips while your kids are temporarily occupied doing something else?  Or when you’re at work and that 2:00 snack attack rolls around and you hit the vending machine because you don’t have anything else handy?

 

These Espresso Energy Bites hit all the high points for me!  They are made of primarily fruit, nuts, and whole grains, which means they will help keep me full without adding in lots of extra calories from added sugars.  Plus, *coffee*.  Need I say more?

 

I like to whip up a batch of these and stash them in the freezer.  They will thaw quite quickly (like in 1-2 mins!) so they are always at the ready if you need a quick snack.

 

1 cup Dates

½ cup Almond Butter

3 T Cocoa Powder

1.5 T Espresso Powder

¼ t Vanilla

Pinch of Salt

1 cup Oats

½ cup Almonds, finely chopped*

 

  1. Soak dates in hot water for 5 minutes to soften. Drain.

  2. Puree dates all other ingredients, except oats and almonds, until smooth and well blended (use a food processor or high-power blender).

  3. Stir in oats and almonds.

  4. Roll in to 1 Tablespoon sized balls (I like to use a small cookie scoop to make them perfectly bite-sized).

  5. Freeze/refrigerate to store.

 

Makes about 40.  Nutrition Information per bite: 50 calories, 1.5g protein, 2.5g fat, 7g carb, 1.5g fiber

 

*NOTE: If you don’t have chopped almonds, you can put them in the food processor/blender first and break them into little bits then take them out before you puree the dates.
