Chocolate-Espresso Energy Bites
Adults need snacks too! Come on, moms, how many of you can relate to standing in the pantry slamming back some chips while your kids are temporarily occupied doing something else? Or when you’re at work and that 2:00 snack attack rolls around and you hit the vending machine because you don’t have anything else handy?
These Espresso Energy Bites hit all the high points for me! They are made of primarily fruit, nuts, and whole grains, which means they will help keep me full without adding in lots of extra calories from added sugars. Plus, *coffee*. Need I say more?
I like to whip up a batch of these and stash them in the freezer. They will thaw quite quickly (like in 1-2 mins!) so they are always at the ready if you need a quick snack.
1 cup Dates
½ cup Almond Butter
3 T Cocoa Powder
1.5 T Espresso Powder
¼ t Vanilla
